Amaranth: Long considered a native crop in Peru, amaranth was a major feed crop of the ancient Aztecs and played a portion in their religious exercises as well. Amaranth is gluten free, high in protein, iron, magnesium, phosphorus, and potassium. It is the only grain that also holds vitamin C.
